And now, a recipe to get your holidays underway…

Eggs, flour, two silver heart cookie cutters, nuts, cinnamon, and a jar are scattered across a baking table.

Bourbon Pecan Chocolate Chip Cookies

Recipe inspired by Half Baked Harvest.

Ingredients

¾ cup raw pecans (whole, not chopped)

2 Tbs Evan Williams bourbon (either straight or try one of their seasonal flavors like spiced apple, cherry, or fire)

¾ cup plus 1 Tbs dark brown sugar

1 cup salted butter, room temperature

¼ cup granulated sugar

2 large eggs, room temperature

1 tsp vanilla extract

2 ¼ cups all-purpose flour

1 tsp baking soda

½ tsp salt

1 ½ cups chopped chocolate chips

Flaky sea salt (optional)

Instructions

  1. Preheat oven to 350° F. On a parchment-lined baking sheet, combine the pecans, 1 tablespoon of bourbon, and 1 tablespoon of brown sugar.
  2. Bake for 8-10 minutes, until toasted. Then remove from the oven and roughly chop the pecans.
  3. Add 1 stick (½ cup) of butter to a small saucepan set over medium heat. Cook until the butter begins to brown, about 3-4 minutes. Remove from the heat and transfer to a heatproof bowl. Stick the bowl in the freezer to chill for about 10-15 minutes, but no longer.
  4. In a large mixing bowl, beat together the remaining ½ cup of butter, the cooled browned butter, 3/4 cup brown sugar, and the granulated sugar until combined.
  5. Beat in the eggs, one at a time, until combined. Add 1 tablespoon of Evan Williams bourbon and the vanilla, beating until creamy.
  6. Add the flour, baking soda, and salt. Fold in the chocolate chunks and chopped pecans. If your dough is sticky, add 2 tablespoons of flour.
  7. Roll the dough into 2 tablespoon-sized balls and space approximately 3 inches apart on the prepared baking sheet. Flatten each dough ball slightly.
  8. Transfer to the oven and bake for 9-11 minutes until the cookies are just beginning to set on the edges, but still doughy in the center.
  9. Remove from the oven and let the cookies cool on the baking sheet. Sprinkle with flaky salt (if desired). Store in an airtight container for up to 4 days.
